Just The Recipe – Sloppy Joes

Serves 8 burger-sized buns. Filling alone is approximately 160 calories each serving.

  • 1 lb ground beef, 85-90%
  • 1 T butter
  • 1 small shallot, diced
  • 1 small colored bell pepper – diced
  • 1 poblano pepper – diced
  • 1/4 C quick oats
  • 1 8oz can tomato sauce
  • 1 T Worchestershire sauce
  • 1t Yellow Mustard
  • 1 large roma tomato, diced
  • 1/2 t dried oregano
  • 1/2 t powdered onion
  • 1t brown sugar
  • Salt n Pepper to taste

In a frying/saute pan on medium heat, saute the shallot and the diced peppers in the butter for about 3-5 minutes, until the veggies are slightly softened. Covering the pan will steam them and cook them a bit softer, if that is your preference. Once cooked, set veggies aside in a bowl.

Cook the beef until it is cooked through, using a utensil to crumble it as it cooks. Add the tomato sauce, tomato, oregano, powdered onion, brown sugar, mustard and Worcestershire sauce to the cooked meat. Mix thoroughly. Add the previously cooked veggies and oatmeal to the meat mix. Stir and cook for three minutes on medium-low heat. Salt and pepper to taste. Bun it up, and serve warm.

NOTES:

-feel free to add cheese to the bun

-I like to remove a bit of the bread in the bun, making a small hollow for the meat to sit, makes the sandwich less messy.

-Taste good with catsup added, if you would like a bit of a sweet tomato vinegar flavor profile.

-You can certainly use fresh herbs if you have them, just double the amount for fresh.
