Recipe – Brazil Nut Bread – Grandma’s Fruit Loaf

Just the recipe – Serves 12. Calories – 480 per slice. A type of fruit cake. Great for freezing and sharing.

Equipment: Mixing bowl, mixing spoon/scraper, 9″x6″ loaf pan. PREHEAT OVEN TO 300 DEGREES

1 lb Brazil Nuts, shelled yet kept whole

1 lb Dates, pitted

8 oz Maraschino cherries, drained

3/4 C All Purpose flour

3/4 Granulated white sugar

1/2t Baking Powder

1/2t Table Salt

3 Whole large eggs, beaten

1t vanilla extract

Combine dry ingredients in mixing bowl. Add nuts, dates and cherries, mix gently. Mix together the eggs and vanilla, then gently fold into the dry mixture.

Line the loaf pan with aluminum foil. Grease the foil with vegetable oil or butter. Pour batter into the loaf pan.

Bake for an hour and a half, or until a toothpick or knife comes out of the center clean (without raw batter). and the crust is browned. Let the loaf fully cool, uncovered, before slicing.
