Just the Recipe – Lime Jello Salad – Vintage

My Grandmother’s recipe for old school green jello salad. Crunchy. Mid-century. Creamy. Kinda weird.

Servings: 8 Calories per serving: 165 Equipment: Knife and cutting board, 8″ square pan or jello server, measuring cup. Grater. Medium mixing bowl.

  • 1 small box lime jello
  • 1/2 C Carrot, shredded
  • 1/2 C Celery, diced
  • 1/4 C green Pepper, diced
  • 1 Scallion top, grated.
  • 1/2 C Heavy Cream, whipped
  • 1/4 Mayonnaise
  • 1 C Cottage Cheese

    ~
  1. Make the lime jello with only one cup of boiling water. Pour into mixing bowl and allow to cool for 15 minutes.
  2. Mise en place work, chop veggies, grate the onion ect.
  3. Add the chopped veggies and all remaining ingredients to the mixing bowl with the jello mix. Stir until all ingredients folded in.
  4. Pour into the serving dish and chill for at least 6 hours.
  5. Serve chilled.
