A bright fruity jello salad, You can’t keep this one to yourself. Have copies of the recipe ready to go when you watch everyone dig in. Potluck, holiday party, picnic or after church luncheon.
Servings: 10 Calories: 220 per serving Equipment: Measuring cup, can opener, a deep serving dish or pan, stirring implement.
- 2 small boxes (3 oz ea.) Lemon Jello
- 20oz of 7up or equivalent soda
- 1 large can (16oz) of crushed pineapple, drained, save and set aside juice
- 1 small can of mandarin oranges (10oz), drained, save and set aside juice
- 1 C miniature marshmallows
- 1 container (8oz) cool whip or equivalent

- Complete your mise en place. Prep, measure ect.
- Make the jello with 2 C boiling water, stir to dissolve the jello powder completely in the serving dish.
- To the jello dish, add the chilled 7up to cool the jello.
- Add pineapple, mandarin oranges and marshmallows, cover and chill the dish for 6 hours+.
- Fold 1/4 C of the reserved juice with whipped topping. Can do it right there in the container.
- Once the jello is firm, add the topping and serve chilled.
