My Grandmother’s recipe for old school green jello salad. Crunchy. Mid-century. Creamy. Kinda weird.
Servings: 8 Calories per serving: 165 Equipment: Knife and cutting board, 8″ square pan or jello server, measuring cup. Grater. Medium mixing bowl.
- 1 small box lime jello
- 1/2 C Carrot, shredded
- 1/2 C Celery, diced
- 1/4 C green Pepper, diced
- 1 Scallion top, grated.
- 1/2 C Heavy Cream, whipped
- 1/4 Mayonnaise
- 1 C Cottage Cheese

- Make the lime jello with only one cup of boiling water. Pour into mixing bowl and allow to cool for 15 minutes.
- Mise en place work, chop veggies, grate the onion ect.
- Add the chopped veggies and all remaining ingredients to the mixing bowl with the jello mix. Stir until all ingredients folded in.
- Pour into the serving dish and chill for at least 6 hours.
- Serve chilled.
