Just the Recipe – Gorgeous Cranberry Relish

Servings: 12 Calories: 110 Equipment: Large bowl, blender, knife, measuring cups and rubber scraper. Freeze: YES

  • 1 Apple diced. I prefer Granny Smith, but use your favorite.
  • 2 C Pineapple diced. Make sure it’s a ripe sweet one.
  • 4 C Cranberries, whole.
  • 1 Clementine (or preferred orange, the sweeter the better), peeled, extra pith removed.
  • 1 C granulated Sugar.
  • 1 T Damiana liqueur (optional)

In a bowl, mix the sugar, apple, pineapple and liqueur. Finely chop the cranberry in a blender with the clementine. Pour the cranberry orange mixture into bowl with the apple and pineapple. Stir. Taste. Add more sugar if it is too tart for your taste. It will mellow, slightly, if allowed to meld overnight.

This six ingredient cranberry relish is a dish I make once a year. I make a large batch of this bright holiday red sweet-tart relish for Thanksgiving to go with the ham. Then I freeze the remainder to serve as a fruit dish all it’s own for Christmas, a month later. I must always set some aside before service, to make sure I have any for Christmas at all, it’s a family favorite. You can omit the liqueur if that is your preference, the dish is still lovely.
